Sample recipe. A plain omelette is a good test of whether a page can stay calm. No filler, no seventeen garnishes. Beat the eggs, respect the butter, fold it while the middle is still soft.

Sample recipe. Cook it if you like, then replace it with a version you trust.

Ingredients

  • 3 eggs
  • 15 g butter
  • salt

Method

  1. 1

Beat the eggs with a pinch of salt until they are one colour, not a foam.

  2. 2

Melt the butter in a small non-stick pan over medium heat. When it foams, add the eggs.

  3. 3

Stir gently until the curds are soft, then stop stirring and let the bottom set.

  4. 4

Fold it in thirds and slide it onto a warm plate. The centre should still glisten.
