This is a sample recipe, not a tested house standard. The idea is a cabbage steak or a pile of wedges, browned until the edges taste sweet, finished with brown butter and lemon. Cook it, then replace this page with your own version.

Sample recipe. Cook it if you like, then replace it with a version you trust.

Ingredients

  • 1 small cabbage, cut into wedges
  • 60 g butter
  • 1 lemon
  • salt

Method

  1. 1

Heat a heavy pan until a drop of water skitters. Add the cabbage wedges, cut side down, with a small splash of water and a pinch of salt. Cover for a few minutes so they steam.

  2. 2

Uncover and let the cut sides colour. Turn them once. They are ready when a knife meets a little resistance and the edges are dark.

  3. 3

In a separate small pan, cook the butter until it smells nutty and the solids are amber. Take it off the heat.

  4. 4

Spoon the butter over the cabbage. Add lemon juice, more salt if it needs it, and eat it while the butter is still noisy.
